Almost there with postfix.
Google AI had me set:
home_mailbox = Mailbox
and the mail was going to ~/Mailbox
So I changed it to:
home_mailbox = /var/mail
Which is where mutt looks by default.
I also turned on:
mail_spool_directory = /var/mail
We will see how that goes. I have the official

Just run mutt, then press 'c' and give either Maildir or Mailbox.
