Perhaps a better test for you would be to pipe your access log to rotate
log and keep a continuous load on your site for the next 10 minutes, you
should see two logs created.

If by "every day" you mean to have a daily rotation for certain log
files, then you do that by specifying the number of seconds rotatelogs
will wait before rotating the log.
In the examples below, 86400 is the value in seconds which is equivalent
to 24 hours:
