@Chris: the output of the dpkg command you provided in #3 suggests not
all the packages were built at the time you tried it (you only installed

I rebuilt libreoffice 6.0.7 for bionic with the debian patch that sets
jdk.net.URLClassPath.disableClassPathURLCheck to true, and verified that
this was built against a version of the JDK that has the patch to honour
that flag, but this hasn't fixed the issue.

This is no longer valid, that bug was fixed at some point in the past 7 (!)
years.
The "Tools > Options > Internet > E-mail" field is unset (blank) by default,
and this makes LibreOffice call xdg-email, which figures out the default e-mail
client as expected.
** Changed in: libreoffice (Ubuntu)
I can observe the issue if I set the "Tools > Options > Internet >
E-mail" field to "/usr/bin/thunderbird". But if I unset the field
(blank) then LibreOffice calls xdg-email, which figures out the default
e-mail client as expected (assuming thunderbird is configured as your
default e-mail client).
Unsetting the GTK_IM_MODULE environment variable makes the problem go
away.
