I had a similar problem in that nothing would open at all with evince
(always said "Unhandled MIME type: application/[insert-MIME-type-
here]"). I "fixed" it by reinstalling the package shared-mime-info. I'm
sure this isn't the best way to fix it and not even a real fix at all,

not sure why evince is looking in ~/.local/share/mime/mime.cache to read
pdf files...
