I saw the icon on the panel wants evolution.svg but that only exists in
/usr/share/icons/hicolor/scalable/apps/evolution.svg and it tries to
find it in /usr/share/pixmaps/

Now all is also perfect here. I had a Evolution icon on my desktop and there
the icon wasn't updated but in the menue it worked. So I recreated the desktop
icon.

I actually reinstalled Feisty just the other day (Friday to be precise)
Upgraded all packages, and the icon was gone.
On the gnome-panel the icon is a text-document with a red X inside, in the
sub-menus it is nothing at all.

Secondly, when un-installing evolution, the icon in the internet (net)
menu disappear, but the one in office does not. It stays there. Which

Confirming in Ubuntu Feisty Herd 5
I can confirm this bug in a fresh install of Ubuntu Feisty Herd 5, there is no
icon in the menu/office.
The .desktop file search for "evolution-2.10" but the icon name in
/usr/share/pixmaps is "evolution.xpm"

Thank you for your bug. When did you create your panel profile? The icon
of the evolution-2.2.desktop is wrong, which is a problem for people who
have installed an earlier version like hoary. That problem will be fixed
with next upload
