In my opinion this confusion could be easily fixed if the default
Alt-F10 behaviour was restored: Pressing Alt-F10 maximizes unmaximized
windows and unmaximizes maximized windows.
This can be done manually in the keyboard shortcuts editor (Toggle
maximize-state or similar), but I think you should
in 11.04 worked and in 11.10 in Ubuntu Help section Tips & tricks,
keyboard shortcuts says ALT-F10 Maximize the current window. If the
window is already maximized, unmaximize it.
Something have to change. Either Help or the shortcut.

Looking at the schemas it seems the default for toggle_maximized is
actually fine - Alt+F10 and it indeed works for a guest session.

The "Keyboard Shortcuts" settings menu has an entry called "Restore
Window" with a default shortcut of 'Alt+F5' in the "Window Management"
section. It restores/unmaximizes the window. Does it work for you?
