Paul, as indicated in your last comment you faced this issue even before
11.04, as this bug is reported for unity in ubuntu 11.04 and the
original reporter confirmed of it being fixed in Ubuntu 11.10 I am
closing it now. if you are facing any problems please report a new bug
report. thx

Onscreen fonts in Natty being displayed corrupted

I have just installed 11.10 and this bug is present there. (I skipped
11.4). The font gradually deteriorates until it becomes illegible.
Rebooting is the only cure I have found.

Note that the .png file above shows what the corrupted text looks like.
If I simply logoff and back in without restarting, everything resolves
itself.

Terminal windows are fine from Ctrl-ALt-Fx as well as Terminator.
