the idea is not to change the default but to provide an easy alternative
(as in #2), or an easy way to optout (maybe a knob passed to create).

The templates are all about opinionated choices. Otherwise, you can argue "why
using gtk and not qt, or let that as an option", why using "bzr and not git"?
and so on…
So, for fixing your issue, you should create a new template with a new
boilerplate importing almost or all the Quic
i.e. instead of doing:
from my_app.preferences import preferences
i'd like to just do this and make it work without any couch:
from my_app.preferences.json import preferences
