I attempted to play around with it today and attempted to remove and install pulseaudio from the latest source with no success. Here's the basic results. it required the following packages to be added. m4 intltool sndfile-programs libsndfile1-dev libspeexdsp-dev ./configure, make and installed

I noticed this bug too. Before I have edited /etc/pulse/daemon.conf to get 5.1 sounds work (just like you Neil wrote) but with 9.10 it doesn't help. I really hope this bug could be fixed before the final release, now there is no way to get sounds out with 5.1 hardware. -- Karmic 5.1 sound choppy,
