For a different bug (AppArmor denying Save A Copy) I installed apparmor-
utils and used aa-complain.
Low and behold, Evince no longer crashes, and I am able to print.
I have included a Kernal Log excerpt in case it is useful to someone...

Uh... I have Oneiric, and Evince definitely crashes when I attempt to
print. No notice, the window just disappears.
I will attach the output when I start Evince from the Terminal, and also
the Kernal Log file output.

In Oneiric (and maybe previous releases) this doesn't happen anymore,

One month later, evince doesn't crash anymore when I attempt to print
this file. What it does however, is simply not printing it (no error
message, it claims to print it). Even the cups server says "Job
completed". Any ideas?

Sure, Hope that's more helpful. I noticed it doesn't happen with all
file, it will print some files just fine.
