Well maybe not in grub, but there's gotta be a bug *somewhere*, because
I, too, have this setting (# defoptions=splash vga=792) and it used to
work fine until the latest kernel update on Ubuntu 8.04.3 LTS server.

grub does not set this value; as noted, if you have an invalid option
you should remove it yourself from /boot/grub/menu.lst. Closing this

You may fix it by changing /etc/grub/menu.lst: just remove vga=xxx in
kernel-line.
