As a business user this would be critical for rolling out to more desktops here. I even forget that when I hit 'X' it shuts down. This just doesn't make sense. Why have an alert for new email that doesn't work when I close the application? This really needs to be like Pidgin, Pandora, Rythmbox, etc

This really is not a fix, just a workaround. I use Evolution all the time and it is in my tray right now. The application to do this is called alltray. It can be downloaded by doing 'sudo aptitude install alltray' . Then if you go to applications>acessories>AllTray, it will ask you what application
