Took a while but I think I have a solution.
If it's to lock the device to a particular device. This means that the
system already 'knows' what the valid choices are for the MAC address.
The best way to display this would be with a drop down list of the valid

It's really there to "lock" a connection to a particular device. The
only efficient way to do so is using the system's MAC, though I agree it
might be a little confusing when exposed in UI like this.

So then the setting in nm-manager is very unclear. Why does it have the
option to modify the MAC address if it's not possible to actually do so?
I found a workaround using mac-changer
I needed this because I am a network specialist, and needed this for my
work.

If the MAC address entered does not match the mac address of the device
you have on your system, then this is why the connection won't show.
I'm marking this Invalid -- if you find that the above doesn't solve
your issue, please file a *new* bug using the "ubuntu-bug network-
manager-gnome"
