Even so, surely this should update the /etc/gnome/defaults.list ? Or
maybe that one specific file was set to use something other than the
default, and the rest of the .ogg files were set to use the default?

Ah, I was able to fix this by right-clicking on the OGG file, selecting
Properties in the context-menu, then selecing the "Open With" tab, and
choosing Totem.

I you delete in that list the application which should not be used, then

You can right click on a music file, go to properties and select (under
"open with") the application with which the file should be opened. Can
you solve your problem in this way?

They both open in the same application for me, as far as I know I haven't
changed from the default...
You can change the defaults by running:
gksudo gedit /etc/gnome/defaults.list
Does that answer the query?
