I've had a look at how to get gdb to connect to the running process
using this command:
sudo gdb --pid 2>&1 | tee gdb-vino.txt
but if I do this it connects but then I can't open a display up using
vnc viewer. It hangs on the Connection Established dialog but no display
pops up.

It's whatever the default is. I set it up using preferences -> remote
desktop. I did a bit of digging to see what package it would be before
filing this report and thought it might be vino but as I wasn't sure, I
left the package blank.
