Considered solved and duplicate of bug 1898910 : no crashes for 48 h after
update of GNOME by "proposed packages".
Congratulations and thanks because it was really annoying to have a session who
crashes at any moment !

I have updated GNOME to 3.38.2 today, by enabling "proposed packages" like
explained in bug 1898910.
I will see if that solves the issue.

Thanks but the last gnome-shell crash on that page was on 2020-05-16.
Although that crash was bug 1886059, it may not be the same issue you
experience now. So please continue following the steps in comment #3
next time the problem happens.
