They have added a new -Z option allowing the GUI to run as the specified
normal user rather than as root and it works like this on my Arch system
with Etherape version 0.9.15.

I suggested you file against gnome-shell (Ubuntu) when you asked for a
specific place to report these kinds of issues. At least reporting there
would allow for someone to triage them to where the bug probably exists.
