I am using English and Czech layouts, both are missing this degree ° key.
Also, Stuart Langridge suggested introducing a compose key to the ubuntu
keyboard and one other person I talked to liked the idea as well. So maybe this
would be a good way to make the keyboard more feature-rich.

What keyboard layout are you using? In the Italian layout, I can write
it by long-pressing on the "o" letter. It's indeed missing from the
English one.
