I found the problem. dh_gconf did not find the schemas as it wasn't in
debian/mail-notification at the time dh_gconf was ran.
This will be fixed in Debian's 4.1.dfsg.1-4 .

The mail-notification.schema is not registred in gconf data
The mail-notification.schema is not registred in gconf database.
I don't know why but dh_gconf don't add the "gconftool-2 --register " command
line in the postinst script.
Run "sudo gconftool-2 --register mail-notification.schemas" to fix this
bug.
