One must have "/boot" unecrypted (something like 200MB ext4 should be plenty).
The fact that manual partitioning is allowing you to start installation is
worrying as the underlying partman has safety check to check that there is a
/boot setup, when required.

I'm not sure this is actually related to the fact that the partitions
are encrypted, so much as having a separate partitions for /home
partitioned as btrfs. I'm running into an almost identical problem, but
not encrypted.
