1 - I have sent mail to the account and it's still a no go.
It "feels" like a permission problem to me but for the life of me I can't see where my perms are incorrect
Hopefully someone else has dealt with this and has found a solution.

there was a typo in my previous post. What I was trying to say was that
the drop-down list box for selecting a folder to move messages to does not
contain any of my user defined folders and therefore I can't move mail to my
user defined folders.

Marc and Chris are both correct, it is highly unlikely that Squirrelmail
is causing the items to be deleted. It is much more likely that the
situation you are experiencing is caused by your IMAP server. Courier
IMAP, for instance, has an automatic purge function built in that does
precisely this.

The Problem Solved After doing the following:
Upgrade:
httpd-2.0.40-21 to httpd-2.0.52-1
mod_ssl-2.0.40-21 to mod_ssl-2.0.52-1
php-mysql-4.2.2-17 to php-mysql-4.3.9-1
php-4.2.2-17 to php-4.3.9-1
comment out LimitRequestBody Line in the /etc/httpd/conf.d/php.conf file.
