IBM has released JFS for LINUX now under it's Open source program, it has a feature
that will allow it to
grow across
as many partitions/disk as you can install, I use it under OS/2 (it is based on
the AIX FS)

The other "growable" file system is NetWare. I don't know if there are
any linux tools to manage NetWare partitions
