Linuxconf has the ability to setup virtual email domains . Best place to
start is read the help screen under linuxconf virtual email domains. It has
step by step how to do it.
I've been using it for almost a year now -- works great.

linux redhat 6.1 makes it easy with LINUXCONF

Start with sendmail.org. Lots of documentation there.
