in case anyone else is hitting this issue, I managed to find a workaround: use
autorandr, which can be used to save specific monitor configurations, assuming
you manage to move the monitors around in Display monitors first

I just realized that if I manage to open Display Configuration, and click
around until I am able to move the monitors to their real position and save it,
everything works as intended.
