the Centos/Exim/Dovecote box I inherited but I must confess to
I see in the documentation that it is better to leave trees of mailboxes on
the same server. I'm wondering if this is an absolute requirement and I
will experience problems if I do not follow this, or if it is more of a
housekeeping issue.

Technically your correct that each user cold have a separate sent folder
but by convention a given mail server will have only one sent folder
name convention.
I have not done all the work to prove it but I believe that it would be
possible to have per user sent folder if I had to.
