i believe I've run into this before. The GDALWarpOptions has a
member, padfDstNoDataReal. It is an array of doubles nBands in size.
Create that, fill it in with your no data values and set the Warp
Option INIT_DEST to NO_DATA:
psWarpOptions = GDALCreateWarpOptions();
