I had to learn to do this recently:
1. Edit in /etc/exim4/update-exim4.conf.conf:
dc_eximconfig_configtype='smarthost'

go to my smarthost. Since I am on a dynamic IP this is
a problem with some remote hosts. Otherwise mail works
fine.
In my /var/log/exim4/mainlog I am getting things like
"T=remote_smtp" a
2 matches
