I swear by Xitami (http://xitami.com). I'll admit it -seems- overly simple, but it leaves a smaller footprint than both Apache and IIS, and is faster on windows that apache. I'm using it on a Debian box right now, and it's survived a hits from slasdot.. That's impressive. Anyway, I'm biased...
