really changing the IP address of the interface (eth0, eth1, whatever), not the
machine

The IP is set in /etc/network/interfaces
The hostname is set in /etc/hostname though you may have to adjust /etc/hosts
too.

To change the hostname; type hostname
To change the ipaddress, edit the file /etc/network/interfaces
