grub-install --boot-directory=/mnt /dev/sda

Sorry, I forgot to mention that this occurs with the stable security
updates.

no errors were spotted.
When rebooted :-

I had to boot off a memory stick and then :-
sudo -i
mount /dev/sda5 /mnt
