Can you reproduce with current pipewire?
I am running 0.3.70 from experimental but have pipewire rss at 30.0M
and pipewire-pulse at 116.9M after 16 hours.
You meant pipewire or pipewire-pulse was leaking?

Starts okish, with rss at around 35MB. But grows about 20MB per hour.
After few days was 2.1GB and didn't stop growing.
I do not have any special custom configuration.
