After further reading, the problem may come from the way the gnuplot pslatex
driver handles the layers of background texts/ vector graphics/ and foreground
texts (cf. a "closed-won't fix" bug in gnuplot dating back to 2016. https://
sourceforge.net/p/gnuplot/bugs/1820/?page=0).

Using the rectangle background with $epslatex seems to hide the axis
annotations and scales of the figure. I suppose that this is the reason why
$eps, $epslatex and $epslatex_standalone were treated differently. Except
that the two lines need to be deactivated.
