FYI, I get correct values using SystemRescueCD 6 (ethtool 5.0, kernel
4.19.34-1-lts) on this same hardware, using the same command.

ading the DOM fails is an other issue (maybe Mellanox NIC
firmware related ?).
But why are the values changing when output is redirected ? Does it change the
variables memory addresses or pointers values ? What mechanism is involved
there ?

FYI, I could not reproduce the bug on Debian Stretch (ethtool 1:4.7-1+b1,
kernel 4.9.0-11-amd64 and libc6 2.24-11+deb9u4).

I was working on setting nss-pgsql on my system when I discovered this bug.
It seems that uid/gid use 32 bits integer and if a uid/gid is set bigger than
(2^32)-1,
their is an overflow.
