I found the solution to this bug, and was able to successfully install a
testing live image and boot it. The problem is actually in the
calamares-settings-debian package.
The problem is caused by changes in the syntax of an upstream Calamares

I just tested the behaviour again under wayland: Because of trouble
with another programm I switched these days to Gnome under XOrg
and have forgotten this. Here Evolution runs fine. In Wayland I have
the same bug as before, segfault on start.
So the bug is half alive :(
After some updates (I did not test it on every update) the bug has gone
on 12.7.2021, evolution now starts and works fine.
