What you need to do is set your SMTP server inside the php.ini file...
[mail function]
SMTP = smtp.server.com ; for win32 only
sendmail_from = [EMAIL PROTECTED] ; for win32 only
;sendmail_path = ;for unix only, may supply arguments as well ; (default is
sendmail -t)
The test string I used to make sure my example worked:
