I'm new to Mailman and looking for how it treats address headers. Mailman CC'd
a sender's subscribed address and I want to know if publishing this address is
the intended behaviour, rather than BCC.
My problem is with the docs at wiki.list.org/DOC/Home. I haven't found a

You can't just create the links, you must administer the list through the web
administration and set the archives to private or public from there.
Remember though that if set to private, they are no longer accessible by the
alias /pipermail/

Have you checked the permissions on /var/log/mailman/error? A permission
denied error can indicate that the user running mailman is different.
