Perhaps you can start the kde-config (system > Desktop Settings wizard) this should open the same dialog you got when you first logged into KDE (at least on RH7.3 and KDE 3.0, I haven't got RH8.0 yet) But I don't know what you mean with "without losing your apps/documents"...
