If you want a real history, consider using a version control system
like CVS or RCS.

Ordinary text editors usually just create a backup of the file as
filename~ prior to saving the modified file for the first time.

And last but not least, you can check the "last modified", "last
accessed" and "last changed" time-stamps of a file with the "stat"
command (man stat).
