Anything after --log-prefix must be in "quotes" if you want to use special characters that can be interpreted or spaces. It places this "text" after the hostname in /var/log/messages (You should also put a space before the final " to separate it from the next data value).
If you want a different file location other than /var/log/messages, you need to alter /etc/syslog.conf as described earlier, using --log-level 6 (for info level)or whatever.
