I personally can't help you if you opt to work within the Red Hat model,
because I don't use rpm for server software, but if you want to build
your server from scratch, this script will do almost all the work for
you:

It's a monolithic job that will do apache, ssl, php, mysql, imap, zlib,
mm, mod_perl all at once.  Dissected, it will also give you the
information you need if you just want to build apache with ssl.  Take
from it whatever ideas you need, or use it as-is.  It's fully
documented.
