You are thinking old school HP printing.  For the life of me, I can't
remember what HP called their printing control language.  I thnk it is HPLJ.

You can't set the printer so that it will stay there, at least I don't 
think you can.  I think the printer will time out and return to the default
setting.  You have to send out the HPLJ control sequences to set those
things are part of the output.

I never deal with HPLJ codes, I prefer working in PostScript.  If I have
a plain text file to print, I use nenscript to format the text, including
2up landscape.

Read the manual for nenscript.
