Hop over to http://www.linuxprinting.org.  The low-cost 1200 looks
like a good bet.  I have no experience with it, but it's closely
related to the 1100, which is a bulletproof little desktop model
that's ubiquitous among my clients (who are not Linux users, I should
point out).  What makes the 1200 different is that it's a postscript
printer, which means it should be very happy hanging off any Unix box.  
Adding postscript to a printer that's known to be reliable should
probably give you a winner.
