A generic answer is yes you can.  I've not tried exactly what you're trying
to do and you don't say what hardware you're going to use, but I have installed
RH 6.2 on dual channel Mylex controllers.  The RAID type on a channel is
irrelevant (at least with most hardware RAID controllers).  A RAID device
(group) of any type looks like one big drive to the OS (any OS).  All the magic
is hidden by the controller. It is also possible on some controllers to have
multiple RAID devices on each channel: i.e. two (three?) 5 drive RAID 5 (or
whatever) groups.  Mylex has 4 channel controllers that are supposed to work
just fine under Linux.  

My system boots off channel 0 of a Mylex controller with the drive configured as
a RAID 5 device and I've configured other machines to boot off RAID 0 and 1
devices.
Once you get the controller set up (usually through the on board BIOS, you're
home free.  As I said, I don't currently use RH 7.2; just getting around to
upgrading, but if your hardware is supported, the install shouldn't be any big
deal.
