Well if you really want to do it look at either UW imap or the cyrus Imap server, both see up to the task, if you pick UW Imap make sure that you switch the default folder create format from what it is to mbx. for the clients you could use almost anything that supports imap :)
Groupwise does have a few good features, especially handling attachments.
