I use grip, which is just a GUI wrapper around your choice of rippers (I
like cdparanoia, included with Red Hat) and encoders (I like bladeenc,
don't think that comes with Red Hat but you can get it at
http://bladeenc.mp3.no/).  grip comes as an RPM with Red Hat.
