I would put one OS on each drive.  That way, if windows eats its hard
drive, you can boot off a floppy and still use Linux.  :-)

Realy, if space is not an issue, then one drive/OS works well.  About
the only thing I might do different would be to put the Linux swap
partition on the Windows drive.
