There are a couple of good cards out there:

Myrinet - www.myricom.com
Good: extremely fast card, relatively easy to setup.  The use of two
types of cables (Note: each card only uses one type, no interchanging).
Really cool ribbon cables.  Cards have cache, something like a 1MB or 2.
Bad: Tend to be expensive, hard to get, and have no direct kernel
support. Requires special hub and cables.

Syskonnect (s?)
Good: Slower than myrinet, but sufficient for general use.  Uses
standard cat5 cable.  Works good with the HP Procurve and their gigabit
modules. Direct kernel support, plug and play.
Bad:  Cards tend to get warm.  They have a 1/2" heat sink on the main
processor.  Not something I would put into a 1U.

Dolphin:
Good:  Apparently faster than Myrinet on some scales.  Multi-dimensional
token ring format.
Bad: No direct kernel support.  IS NOT AN ETHERNET INTERFACE.  It does
not have a device designation.  Only good for use in a beowulf cluster. 
Token Ring Format.

Personal preference would be go syskonnect and get the gigabit modules
for your hubs.  The cards are readily available and seem to work well. 
We had a cluster here and it ran well for us and it was easy to setup. 
If you are looking for raw speed, go myrinet.  They are very quick
cards, but require some software compiling and some time.  Beware that
they are hard to get and can take in upwards of a month to get cards
when they are backlogged.
