As far as I remember, all you need to do from within the Preferences
(Applications section) is choose the correct MIME Type, and then hit the
Choose button to navigate to the executable for Star Office. Otherwise, I
suppose you can enter soffice in there as long as that binary is in your
path. That should work, although I never bothered much with it.
