Though I don't use minicom, I'd say it's a fair terminal emulator, not
merely a modem dialer.

However, if you're looking for a terminal program I'd suggest you take a
look at C-kermit (source and binaries at http://www.columbia.edu/kermit).
While it doesn't offer terminal emulation (you are whatever type of 
terminal you're using, so in this case you'd be a 'linux' term type),
it is a robust program which provides many features (least of which is
file transfer). You can move the termcap/terminfo descriptions over to
the target machine so it too will know how to drive a 'linux' terminal
type.
