I worked at a place where the owner of one domain wanted a
copy of all mail his employees received.  I'm not positive but
I believe we set it up so that all mail for that particular
domain would go to one account.  A procmail ruleset made sending
the owner a copy of each mail very simple.

I have no idea how you'd do it for outgoing mail.
